AGAVE BANANA BREAD

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup agave syrup
  • 2 eggs
  • 2 ⅓ cups mashed overripe bananas
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate large bowl, cream together butter and agave syrup.
  4. Stir in eggs, mashed bananas, and vanilla.
  5. Fold in flour mixture until just combined.
  6. Pour batter into the prepared loaf pan.
  7. Bake for 60-65 minutes, until a toothpick inserted comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
